Spicy Chilli Idli

I tried out this recipe when I had some left over idlis. I did not want to throw it away so I tried this which came out really well.















Ingredients

Idlis 3-4
Mustard seeds 1/2 tsp
Curry leaves
Green chillies 2 sliced
Onion chopped 1/2
Tomato 1
Capsicum sliced 1/2
Ginger garlic paste 1 tsp
Chilli powder 1 tsp
Chicken masala (optional)
Garam masala 1/2 tsp
Soy sauce 1/2 tsp
Tomato sauce 1 tbsp
Coriander leaves
Salt 1/2 tsp
Oil

Directions- How to make

Cut the idlis into small cubes. Fry them well in oil and keep aside.

Heat oil in pan and temper some mustard seeds and curry leaves. Add the green chillies, onions, ginger-garlic paste and tomatoes. Add salt to it. Fry well till they form a thick paste. Add chilli powder, garam masala, chicken masala and bind them well. Mix the idlis in this sauce. Mix them well. Finally add soy sauce and tomato sauce. Garnish with coraiander leaves. Serve these hot spicy chilli idlis in the evening with tea.

Masala Puri

This evening my hubby wanted to have Masala Puri and was wondering if I knew how to make it. Though am not very fond of it, I tried making it with the little green peas and the few ingredients I had at home. I did'nt have the puris and sev, but it did come out well.

Ingredients

1/2 cup boiled green peas (salted)      
2 green chillies  (Green chillies must be carefully used as it can make it very hot)
1/2 cup coriander leaves
2 cloves
1 inch cinnamon
1 Bay leaf
4-5 pepper
Tamarind (Grape sized)
Salt
Coriander powder 1/2 tsp
Dry mango powder or Aamchoor 1/2 tsp
Rice powder 1/2 tsp
Wheat powder 1/2 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
1-2 tsp oil
1/2 medium sized onion
1/2 tsp ginger garlic paste
pinch of Asafoetida powder

Ingredients for Green chutney

3 Green chillies
1/2 cup coriander leaves
1-2 tsp Roasted cumin powder
Salt

Grind it all to a thick paste adding little water.

Ingredients for Garnishing

1/2 cup chopped tomatoes
1/2 cup chopped onions
1/2 cup boiled green peas
Salt
1/4 tsp chilli powder
Bombay sev
Chaat Puris
Coriander leaves
Lemon juice

Recipe for Masala Puri

Heat 1 tbsp oil. Add mustard seeds, cumin seeds. Once it starts spluttering, add the ginger garlic paste. Fry for a minute. Add the onions, salt and asafoetida powder. Fry for 2 minutes.

Grind this mixture along with 1/2 cup boiled peas, coriander leaves, cinnamon, cloves, pepper, bay leaf, green chillies and tamarind to a  thick paste adding required amount of water.

Next transfer the above contents to a wok. Add rice powder, wheat powder, aamchoor (dry mango powder) and coriander powder to it. Bring it to a boil. Keep at low flame and let it boil to a form a thick gravy.

Finally take a plate layer 1/2 cup green peas. Break the chaat puris on top of it. I used some unsalted potato chips as I did not have chaat puris at home. Sprinkle some salt and chilli powder. Next add the hot green chutney over it. Add the required amont of gravy and finally garnish the chaat with chopped onions, chopped tomatoes, chopped coriander leaves. Adding sev to it completes the hot masala puri. Sprinkle some lemon juice on top. Enjoy it with evening tea.

Home-made Potato Chips

Ingredients

2 large potatoes
Oil
Seasoning: Salt, pepper and chilli salt

To make the chips with baking oven

Make thin potato slices. Preheat the oven to maximum for 15 minutes. Grease the baking tray or place a baking sheet underneath. Brush little over the slices. Add little salt, pepper and chilli powder over the slices and place them in the baking tray. Keep the tray in the baking over for 10-15 minutes. The chips are ready. Keep a check as the slices may get burnt at times if its overheated. Enjoy with tomato sauce during tea time.

Deep fry

Soak the potato slices in salt water for 20 minutes. Remove them from water and pat them dry. When you think they are dry enough say after 2 hours, deep fry them in oil.  

Masala Vadai

Ingredients

1 cup Chana dal/ kadala paruppu and 1 tbsp rice – Soaked for 2 hours
4 green chillies
4 garlic cloves
1 inch ginger
Cumin seeds ½ tsp
Curry leaves
1 chopped onion
Garam masala
Salt, Oil

Directions - How to make

Keep 1 tbsp chana dal separately. Grind the remaining chana dal, green chillies, garlic, ginger and cumin seeds adding very little water coarsely in a mixer. Now add salt, onion,curry leaves, garam masala and the left out chana dal. Mix them well.

Now apply little oil in your palms and make small flat vadas to avoid sticking. Deep fry them in oil. Serve them hot with chutney or tomato sauce in the evening tea time.

Diamond-cut Biscuits

This is very easy and quick to make when you have nothing to eat at home. I made these during my husband’s exam time. Here is the recipe.        
                           
Ingredients

2 cups of all-purpose flour/ maida                              
1 cup of powdered sugar
1 tsp salt
Oil

Directions - How to make

Make smooth dough out of maida, sugar, salt and water. Leave it for a while. After 10-15 minutes roll them out the way you make chapattis and cut them in shapes you desire with a knife. I generally cut them in the shape of diamond as it is easy and hence the name. Finally deep fry them in oil.
