Cooking Tips

1) To avoid the potatoes going mushy while boiling them in a cooker, avoid adding water to the vessel containing the potatoes. Only the cooker should contain water. Always steam the potatoes rather than boiling them with whistle on.

2) For fish fry  Marinate the fish with little oil. This way fish will require less oil while frying. Also marinate the fish atleast for 2-3 hours and would be better if kept in the refrigerator.

3) Keeping vegetables fresh Green chillies and curry leaves can be kept fresh for a longer time if kept in the freezer. There is not much of a difference in the taste keeping it in the freezer and using it for cooking. If going out for a few days even other vegetables like beans, cauliflower (cut into pieces), lady finger, carrots and biiter gourd can be kept in the freezer packed in a zip-lock cover.

4) To avoid smelly dry fish/ Karuvadu Wash them well in warm water and use lot of curry leaves while cooking them.

5) To reduce bitterness of Bitter gourd/ Pavakai Peel off the skin, remove the seeds and wash well the bitter gourd with salt water.

6) For crispy fries For vegetables like potato, plantain/ vazhakkai, yam/karunakizhangu or colocasia/sepakizhangu adding little rice powder while frying them will make them bit crispy.

7) Left over rice It can either be used for making rice payasam/kheer or rice pudding.


8) To avoid side-effects of Instant Noodles Throw away the boiled water of the noodles so as to drain away the wax and cook them in fresh water with lot of vegetables added to it. It also would be wise to use your own masala (coriander powder,chilli powder,salt and pepper) than using the maggi masala which contains flavour enhancers like monosodium glutamate.
 
9) To fry onions faster Sprinkle little salt after adding onions while frying. This will fasten the process of cooking
